I personally live in the city, but would choose an Airbnb in old Jaffa or Neve Zedek area which are authentic and beautiful Another good option is Abraham hostel, it's in a central location, travellers friendly. It's a hip and modern hostel. With clean rooms (different verities and prices) a nice bar and hanging spaces to chill and socialized if you want. You can also get some info about art and music events or different activities that's happens around the city.
